
This is a simple eggplant recipe that can be prepared in about an hour. To make this dish, you will require these ingredients,
Ingredients:
1. Six teaspoons of extra virgin olive oil.
2. Two cups of tomato sauce.
3. Two fresh garlic cloves, chopped.
4. Half a cup of crusted croutons (or) bread crumbs.
5. A cup of either processed or fresh mozzarella cheese, shredded.
6. A quarter cup of parmesan cheese, shredded.
7. Half a cup of onions, diced.
8. A teaspoon of dry oregano.
9. A teaspoon of fresh parsey.
10. Ground black pepper.
11. Two eggplants.
Preparation:
1. First switch on the oven and preheat it to about 325 degrees fahrenheit.
2. Take the two eggplants and slit it lengthwise and make it hollow to a quarter inch flat rim.
3. Now heat the extra virgin olive oil in a frying pan under medum flame. Dice the centers of the eggplants and add them into the hot frying pan along with the dry oregano, black pepper and onions. Mix them all together in the frying pan and let it cook until the mixture turns a golden brownish color.
4. Now switch off the flame and transfer the mixture into the eggplants. Top it up with a layer of fresh parsley, crouton crumbs and parmesan cheese. Place the eggplants in an oven safe baking dish and layer in the tomato sauce and the mozzarella cheese.
5. Let the eggplants bake for about half an hour or till the eggplant becomes soft.
Serve hot.
